If you are having a long party (i.e. food will be out for an hour or longer), don’t put the stuffed mushrooms in a steam pan. They will be sitting in a half inch pond of water. Looks good for raising frogs, not so much for appetizing people.
Try an alternate recipe like mushroom pinwheels (I will update this post with a recipe, when I find it again) that are robust for long exposure to the heat, or just put the mushrooms on a platter.
