Pre-bake appetizers using bacon

Every New Year’s Eve I make a few items that are bacon-wrapped. I always try to make sure there are no dishes in the sink when the guests arrive. That is pretty difficult if you cook all day leading up to the party. To minimize cleanup with items that are bacon-wrapped, prebake the items 2/3 of the way the day or two before the party so you can get 80% of the grease drained off ahead of time. The day of the party, use parchment paper or aluminum foil on the pan so after baking you can just toss the paper which will not have an excessive amount of grease due to the pre-baking. It also makes it easier to re-use the baking sheet for cooking the next appetizer.
