Meatballs are a great make-ahead appetizer. There is no reason to stress over them. I generally make the meatballs a couple days in advance of the party. I just roll them, bake, and freeze. I put them in a Crockpot with either teriyaki or barbeque sauce about 30 minutes before the party. That is enough time to thaw them and get hot for the first guests. Homemade meatballs can handle being exposed to heat for extended periods and don’t taste mealy like the frozen pre-made meatballs from the freezer section.
